Soft and chewy mint chocolate chip cookie bars filled with mint flavored M&Ms. These easy cookie bars are started from a box of cake mix, and filled with mint flavoring, chocolate chips and M&Ms candy. They are perfect to bake this St. Patrick’s day for a fun and easy treat that everyone will love.
The cookie dough is made by mixing a box of cake mix with eggs and vegetable oil until smooth. Mint extract and green food coloring are mixed into the cookie dough. Chocolate chips and mint flavored M&Ms are folded into the cookie dough. Evenly press the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.
Cake Mix Mint Chocolate Chip M&M Cookie Bars
Ingredients
- 1 ( 15 oz.) box yellow cake mix
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon mint extract
- green food coloring
- 1 cup chocolate chips
- 1/2 cup mint M&Ms
Instructions
- Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Add in the mint extract and green food coloring, and mix until it is fully green.
- Fold in the chocolate chips and mint M&Ms. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
