Soft and chewy sugar cookie cups filled with St. Patrick’s day themed sprinkles. These easy cookie cups make the perfect quick and easy treat to bake this St. Patrick’s day. The cookie dough is a classic sugar cookie dough filled with green colored sprinkles to make them festive for St. Patrick’s day.

The cookie dough is made just like how you would prepare a classic sugar cookie dough. Except with the addition of St. Patrick’s day themed sprinkles folded into the cookie dough. Evenly divide the dough between a paper lined muffin pan, and bake until the center of each cookie cup comes out clean with a toothpick.

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup green sprinkles

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and vanilla extract and mix until smooth.
  • Add in the flour mixture, and mix until it is fully combined. Fold in the sprinkles. Evenly divide the cookie dough between the prepared muffin pan. Bake for 12-15 minutes.
