Cheesy Irish Soda Bread Muffins

Cheesy and delicious Irish soda bread muffins. Irish soda bread muffins are classic Irish dish, but instead of the traditional version, these muffins are filled with cheddar cheese. These muffins would make the perfect side dish for just about any main meal, or as a side to a S. Patricks day meal.

The bread is simple to make, all of the ingredients are whisked together in a large mixing bowl. Then divide the mixture between 12 greased muffin tins. Bake until the center of each muffin comes out clean with a toothpick.

Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 large egg
  • 1/2 cup butter, melted
  • 1 1/2 cups milk
  • 1/2 cup shredded cheddar cheese

Instructions
 

  • Preheat the oven to 400 F. In a large bowl, whisk together flour, salt, baking soda, egg, melted butter, and milk until smooth. Fold in the shredded cheddar cheese.
  • Evenly divide the mixture between 12 greased muffin cups. Bake for 12-15 minutes.
