These cookies combines a classic peanut butter cookie filled with white chocolate chips with a sweet cinnamon and sugar classic snickerdoodle cookie. These cookies are easy to make, and perfect for any occasion.

The cookie dough is started like a classic peanut butter cookie dough, then white chocolate chips are folded into the cookie dough. The cookies are then rolled into balls, and rolled into a mixture of cinnamon and granulated sugar. They are baked until the cookies are fully cooked through. Let the cookies cool completely on a cooling rack before serving.

Peanut Butter White Chocolate Chip Snickerdoodle Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter, granulated sugar, and brown sugar until fluffy.
  2. Add in egg and vanilla extract and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the white chocolate chips. In a shallow dish, combine granulated sugar and ground cinnamon.
  3. Roll the cookie dough into balls, and roll into the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
