These cookies combines a classic peanut butter cookie filled with white chocolate chips with a sweet cinnamon and sugar classic snickerdoodle cookie. These cookies are easy to make, and perfect for any occasion.

The cookie dough is started like a classic peanut butter cookie dough, then white chocolate chips are folded into the cookie dough. The cookies are then rolled into balls, and rolled into a mixture of cinnamon and granulated sugar. They are baked until the cookies are fully cooked through. Let the cookies cool completely on a cooling rack before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter, granulated sugar, and brown sugar until fluffy.
  • Add in egg and vanilla extract and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the white chocolate chips. In a shallow dish, combine granulated sugar and ground cinnamon.
  • Roll the cookie dough into balls, and roll into the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
