Easy red velvet snowball cookies filled with white chocolate chips and covered in powdered sugar. The cookies are buttery like a classic shortbread, but they are rolled in powdered sugar, making the cookies look like snowballs. They have the same classic red velvet flavor because of the cocoa powder, and the look of red velvet cookies because of the red food coloring. These cookies would make the perfect Christmas or Valentine’s day cookie.

The cookie dough is started like a classic shortbread cookie, but with the addition of cocoa powder and red food coloring to make them red velvet flavor. White chocolate chips are folded into the cookie dough and rolled into balls. Bake the cookies on a large ungreased baking sheet until the bottoms are lightly browned. Roll the cookies in a dish of powdered sugar, and let cool completely before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • red food coloring
  • 1/2 cup white chocolate chips
  • 1/2 cup powdered sugar

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, combine butter with powdered sugar until fluffy. Add in the flour, cocoa powder, and vanilla extract and mix until combined. Add in red food coloring and mix until it is fully red. Fold in white chocolate chips.
  • Roll the cookie dough into balls, and place onto a large ungreased baking sheet. Bake for 10-12 minutes. Place the powdered sugar into a shallow dish. Roll the cookies into powdered sugar.
