These quick and easy cookie bars combines a traditional red velvet cookie with a classic snickerdoodle cookie. These cookie bars are perfect for baking this Christmas or Valentine’s day. The dough for these cookie bars is made similar to a classic red velvet cookie dough, except for the addition of cream of tartar to give them the traditional snickerdoodle cookies. The cookie dough is pressed into a greased 8-inch square baking dish. It is topped with a mixture of cinnamon and granulated sugar. And baked until the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • red food coloring
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, cocoa powder, salt, baking soda, and cream of tartar. In a large bowl, combine butter with granulated sugar and brown sugar until fluffy.
  • Add in egg and vanilla extract, and mix until smooth. Add in the flour mixture and mix until it is fully combined. Add in the red food coloring and mix until it is fully red.
  • In a small bowl, combine granulated sugar and ground cinnamon. Press the cookie dough into a greased 8-inch square baking dish. Sprinkle with the cinnamon sugar mixture. Bake for 20-25 minutes.
