Soft and chewy peanut butter cookie bars made with a fun Christmas themed twist to them. These chewy peanut butter cookies are filled with Christmas themed sprinkles mixed into the cookie dough. They make these cookie bars more festive, everyone will love baking these cookie bars together.

The cookie dough for these cookie bars is similar to a classic peanut butter cookie dough, except with the addition of Christmas themed sprinkles. The cookie dough is pressed into a greased square baking dish and baked until the center comes out clean with a toothpick. Let the bars cool completely before cutting into bars and serving.

Christmas Peanut Butter Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Christmas sprinkles

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter, granulated sugar, and brown sugar until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Fold in the Christmas sprinkles.
  • Press the cookie dough evenly into a greased 8-inch square baking dish. Bake for 20-25 minutes.
