Soft and chewy oatmeal cookie cups with a fun Christmas twist to them. They are filled with Christmas themed sprinkles in the dough. The cookie dough is baked in muffin cups, making them perfect for serving to a group because they are already pre-portioned. Bake these cookie cups this Christmas for a fun and easy Christmas themed dessert.

The cookie dough is made like a classic oatmeal cookie dough, except with the addition of the Christmas themed sprinkles. Evenly divide the cookie dough between prepared lined muffin tins, and bake until the cookie cups come out clean with a toothpick. Let cool completely before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Christmas sprinkles

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a medium bowl, whisk together flour, oats, salt, and baking soda.
  • In a large bowl, combine butter with sugar until fluffy. Add in egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined.
  • Fold in the Christmas sprinkles. Evenly divide the cookie dough between the paper liners. Bake for 15-20 minutes.
