Chewy chocolate fudge brownies combined with a soft and chewy classic sugar cookie makes these delicious sugar cookie brookies. Brookies are a combination of a brownie and a cookie. They are delicious combined together to make a sweet and delicious treat that everyone will love.

The brownie batter is made simple, with all of the ingredients whisked together in the same bowl. The cookie dough is made with a classic sugar cookie dough. To make this recipe even more simple, use a box of brownie mix and some refrigerated sugar cookie dough instead of making them homemade. Pour the brownie batter into a square baking dish, and top with the sugar cookie dough. Bake until the center comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In another large bowl, combine butter with sugar until fluffy. Add in the egg and vanilla extract, and mix until smooth.
  • Add in the flour mixture, and mix until the flour is fully combined. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in eggs, melted butter, and vanilla extract. Mix until smooth.
  • Pour the brownie batter into a greased 8-inch square baking dish. Top with the sugar cookie dough. Bake for 25-30 minutes.
