You can prepare this dish ahead of time, and bake it the day that you serve it. This stuffing is made moist with mashed potatoes, and seasoned with dried herbs, like oregano and rosemary.
The mashed potatoes are prepared first, you can also use leftover mashed potatoes for this dish. Onion and celery are cooked in butter until the vegetables are softened. The vegetables are mixed along with mashed potatoes, bread cubes, seasonings, and chicken broth. Press the stuffing mixture into a greased baking dish and bake until the top is lightly golden browned.

Ingredients
- 3 cups prepared mashed potatoes
- 4 cups bread cubes
- 1/2 cup butter
- 1/2 cup diced onion
- 3 stalks celery, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried rosemary
- 2 cups chicken broth
Instructions
- Preheat oven to 350 F. In a medium skillet, melt butter over medium heat. Cook onion and celery until softened. In a large bowl, combine mashed potatoes with bread cubes, seasonings, and chicken broth.
- Spread mixture into a greased baking dish. Bake for 50-55 minutes.
