Easy and delicious zucchini patties made using only five ingredients. It takes very little time to make these quick and healthy patties that are filled with zucchini, parmesan cheese, and breadcrumbs. They are cooked in a skillet with olive oil until lightly browned. These zucchini patties taste great topped with sour cream and served with just about any main meal, such as chicken or pork chops.
To shred the zucchini, you can use a grater. Mix the grated zucchini with an egg, grated parmesan cheese, and Italian seasoned breadcrumbs. Form the mixture into equal sized patties and set onto a plate. Heat a large skillet over medium heat and add olive oil. Cook the zucchini patties in the oil until lightly browned on both sides.
