In a large measuring cup, whisk together milk and vinegar, let sit for 5 minutes. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
Add milk mixture, lemon juice, melted butter and eggs to dry ingredients. Whisk until just combined, fold in blueberries.
Heat a skillet or griddle over medium heat. Spray with non stick cooking spray. Ladle 1/4 cup batter onto hot skillet and cook until bubbles start to form. Flip and cook until other side is lightly browned.
