Flourless Marshmallow Peanut Butter Cookie Cups

Ingredients
  

  • 1 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup mini marshmallows

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, mix peanut butter with both granulated sugar, and brown sugar, egg, and vanilla extract until smooth. Fold in the mini marshmallows.
  • Evenly divide the cookie dough between the prepared paper liners. Bake for 12-15 minutes.
