In a large measuring cup, whisk together milk and vinegar.Let sit for 5 minutes. In a large bowl, whisk together flour, granulated sugar, salt, baking powder and baking soda.
Add in eggs, melted butter and milk mixture. Whisk everything together until the pancake batter is just combined.
Heat a skillet or griddle over medium-low heat and spray with non-stick cooking spray. Ladle about a 1/4 cup of batter for each pancake onto the hot skillet and let cook for a couple of minutes until bubbles start to form around the edges. Flip the pancakes and let cook for another minute on the other side until both sides are golden browned.
