In a medium bowl, whisk together flour, salt and baking soda. In another large bowl using either a hand or a stand mixer, beat softened butter with granulated sugar until light and fluffy.
Beat in eggs and vanilla extract until smooth. In three separate additions, add the flour mixture into the butter mixture. Beating after each addition until fully incorporated.
Cover and refrigerate the cookie dough for at least one hour. Preheat the oven to 350 F.
Roll the cookie dough into balls and place 2-inches apart onto ungreased baking sheets. Bake for 10-12 minutes.
