In a large bowl, whisk together flour, sugar, baking powder, salt and pumpkin pie spice. Add in melted butter, pumpkin puree, eggs and milk. Whisk until just combined.
Heat a skillet or griddle over medium-low heat and lightly grease with non stick cooking spray.
Ladle about 1/4 cup of the pancake batter onto the hot skillet and cook until bubbles start to form. Flip and cook other side until lightly browned.
