White Chocolate Chip St. Patrick’s Day Cookie Bars

Soft and chewy white chocolate cookie bars filled with green St. Patrick’s day themed sprinkles. The cookies are similar to a classic sugar cookie, but filled with delicious white chocolate chips and sprinkles. These easy cookie bars are perfect to bake this St. Patrick’s day. Everyone will love the chewy texture and delicious white chocolate flavor.

The cookie dough is started like a classic sugar cookie dough, then St. Patrick’s day themed sprinkles and white chocolate chips are folded into the cookie dough. Evenly press the dough into a greased square baking dish, and bake until the center of the bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

White Chocolate Chip St. Patrick's Day Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup St. Patrick's day sprinkles
  • 1 cup white chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and vanilla extract and mix until smooth.
  • Add in the flour mixture, and mix until it is fully combined. Fold in the sprinkles and white chocolate chips. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
