White Chocolate Chip Lemon Cookie Bars

Chewy cookie bars filled with tons of delicious lemon and white chocolate flavors. Everyone will love these easy cookie bars for a delicious spring or summer themed dessert. The lemon and white chocolate flavors go together perfectly in these easy cookie bars.

The cookie dough is made similar to a classic sugar cookie dough, except instead of vanilla extract, lemon juice is used. White chocolate chips are also folded into the cookie dough. Press the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

White Chocolate Chip Lemon Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 tablespoon lemon juice
  • 1 cup white chocolate chips

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in the egg and lemon juice and mix until smooth.
  2. Add in the flour mixture, mix until it is fully combined. Fold in the white chocolate chips. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
