White Chicken Chili

Classic white chicken chili with cannellini beans and green chilies. This meal is the perfect meal for any weather, served topped with cheese for a delicious meal. It is so quick and easy to make this meal, using leftover or rotisserie chicken. Serve this bowl of chicken chili with a side of bread or a light side salad for a healthier side dish.

This chicken chili is so easy to make, onion and garlic are cooked in oil until fragrant. Then all of the remaining ingredients are added to the saucepan and cooked for 20-30 minutes, or until everything is heated through. Serve this delicious meal with a side of bread and salad.

White Chicken Chili

Ingredients
  

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 pound cooked and shredded chicken
  • 4 cups chicken broth
  • 2 ( 15 oz.) cans cannellini beans, drained
  • 1 ( 4 oz.) can diced green chilies
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions
 

  • Heat olive oil in a large saucepan over medium heat. Cook onion and minced garlic in oil until softened. Add in chicken, chicken broth, beans, green chilies and seasonings.
  • Conitnue to cook over medium heat for 20-30 minutes.
