Soft and chewy peanut butter cookie bars filled with tons of fun Valentine’s day themed sprinkles. These easy and delicious peanut butter bars make the perfect dessert to bake for Valentine’s day. Everyone will love these classic peanut butter cookie bars with a fun holiday twist.

The cookie dough is started like a classic peanut butter cookie dough, then Valentine’s day themed sprinkles are folded into the cookie dough. Press the cookie dough into a greased square baking dish and bake until the center comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Valentine's Day Peanut Butter Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Valentine's day themed sprinkles

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter, and both granulated and brown sugar until fluffy.
  • Add in egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Fold in the sprinkles.
  • Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
