These chewy oatmeal brookies make the perfect dessert for when you can’t decide if you want a chewy chocolate brownie or a classic oatmeal cookie. Everyone will love these brookies for a fun Valentine’s day treat.

The brownie batter is quick and easy to make, all of the ingredients are whisked together in a large mixing bowl. You can also use a box of brownie mix instead to make it even easier if you want. For the cookie dough, it is made just like a classic oatmeal cookie, except with the addition of Valentine’s day themed sprinkles mixed into the cookie dough. Pour the brownie batter into a square baking dish, and top evenly with the cookie dough. Bake until the center comes out clean.

• 1/2 cup butter, melted
• 2 large eggs
• 1 teaspoon vanilla extract

• 1/2 teaspoon salt

• 1 cup granulated sugar
• 1 large egg
• 1 teaspoon vanilla extract
• 1/2 cup Valentine's day sprinkles

Method

 

1. Preheat the oven to 350 F. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in eggs, melted butter, and vanilla extract and whisk until smooth.
2. In a medium bowl, whisk together flour, quick oats, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and vanilla extract and mix until smooth.
3. Add in the flour mixture, and mix until it is fully combined. Fold in the sprinkles. Pour the brownie batter into a greased 8-inch square baking dish.
4. Evenly spread the cookie dough over the brownie batter. Bake for 25-30 minutes.
