I love to make sloppy joes for quick weeknight dinners, but instead of using the usual ground beef I replaced it with ground turkey instead. To eat healthier, I want to find new ways to reduce the amount of red meat in my diet. An easy way to do this is to replace ground beef in your recipes with ground turkey. The sloppy joes are still just as delicious with ketchup and diced tomatoes. Serve over hamburger buns or for a gluten-free alternative, serve the sloppy joes over lettuce leaves.

Ground turkey is cooked in the same way as ground beef is. Brown the ground turkey over medium heat in a large skillet until the mixture is no longer pink and fully cooked through. Drain the grease if needed and return the turkey to the skillet. Add in ketchup, canned diced tomatoes with juices, minced garlic and seasonings. Let the mixture cook for another 10-15 minutes. Serve the sloppy joe mixture over buns or lettuce leaves for a quick weeknight meal that is ready in 30 minutes.

Ingredients
  

  • 1 pound ground turkey
  • 1/2 cup ketchup
  • 1 ( 15 oz.) can diced tomatoes
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • hamburger buns

Instructions
 

  • Brown ground turkey in a large skillet over medium heat. Drain grease and return turkey to skillet.
  • Add in ketchup, diced tomatoes with juices, minced garlic, salt, pepper and garlic powder. Let the mixture cook over medium heat for about 10 minutes, until the sauce has thickened. Serve over hamburger buns.
