When you think of salads, you usually think of lettuce salads. But fresh spinach leaves are a great delicious alternative. Spinach leaves with red onion, cubes of mozzarella cheese, black olives and fresh cherry tomatoes. All drizzled in a balsamic olive oil dressing makes this salad a healthy delicious side dish to add to any meal. It is easy to make this salad ahead, just toss all of the ingredients together in a large bowl. Cover and refrigerate until you are ready to serve.

Fresh spinach leaves are the base for this salad, just dump a bag of spinach into a large bowl. Toss the spinach with sliced red onion, cubed mozzarella cheese, sliced black olives, and a pint of halved cherry tomatoes. At this point, you can cover and refrigerate the salad until you are ready to serve it. For the balsamic olive oil dressing, just before serving in a small bowl, whisk together olive oil, balsamic vinegar and Italian seasoning. Drizzle the dressing over each individual salad.

 

Tomato Mozzarella Spinach Salad

Ingredients
  

  • 1 ( 5 oz.) bag fresh spinach
  • 1/2 large red onion, sliced
  • 4 oz. mozzarella cheese, cubed
  • 1 ( 6 oz.) can black olives, sliced
  • 1 pint cherry tomatoes, halved
  • 4 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon Italian seasoning

Instructions
 

  • In a large bowl, combine the spinach, onion, mozzarella, olives and cherry tomatoes.
  • In a small bowl, whisk together olive oil, balsamic vinegar and Italian seasoning. Drizzle dressing over each salad.
