Soft and fluffy homemade blondies filled with crushed mint chocolate thin mint cookies. These easy blondies are perfect to bake for St. Patrick’s day with the delicious mint flavors, or to enjoy anytime of the year. Everyone will love these easy chewy blondies.

The batter for the blondies is quick and easy to make, all of the ingredients are mixed together in a large bowl until smooth. crushed thin mint or other mint chocolate cookies are then folded into the batter. Pour the mixture into a greased square baking dish. Bake until the center of the blondies comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Thin Mint Blondies

Ingredients
  

  • 1 cup butter, melted
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup crushed thin mint cookies

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, whisk melted butter with brown sugar, eggs, and vanilla extract until smooth. Add in the flour, salt, and baking powder. Mix until it is smooth.
  • Fold in the crushed thin mint cookies. Pour the mixture into a greased 8-inch square baking dish. Bake for 20-25 minutes.
