Nachos are the perfect game day snack or appetizer. To make them even better, I made Texas style nachos. Texas nachos are loaded with refried beans, cheese and pickled jalapeno slices. They are cheesy and spicy, a great way to enjoy the game or as a quick appetizer. I used a Mexican blend cheese for these nachos, because the mix of cheddar cheese and monterey jack cheese works well with the nachos. Although you could also use cheddar cheese as well.
You can either use store bought tortilla chips or you can make them your self. To make fresh homemade tortilla chips, start with thin corn tortillas. Cut them into quarters and fry them in the oil using either a deep fryer or in a large deep saucepan. Fry them until they are crispy and golden browned. Salt to taste. Layer the tortilla chips onto a large baking sheet. Mix refried beans with salsa and spread evenly over the chips. Sprinkle with shredded Mexican blend cheese. And top each chip with one pickled jalapeno slices. Bake until the cheese is melted.
Texas Nachos
Ingredients
- 10 corn tortillas
- vegetable oil, for frying
- salt, to taste
- 1 ( 15 oz.) can refried beans
- 1.4 cup salsa
- 1 cup shredded Mexican blend cheese
- Pickled jalapeno slices
Instructions
- Heat oil in a fryer or saucepan to 375 F. Cut tortillas into triangles. Fry tortillas until golden browned and crispy.
- Drain and season with salt to taste. Preheat the oven to 350 F. Lay the tortilla chips onto a large baking sheet. Heat refried beans in a microwaveable bowl until smooth.
- Mix salsa into the refried beans. Evenly spread refried beans over the chips. Sprinkle evenly with shredded cheese. Top each nacho with one pickled jalapeno. Bake for 10 minutes, until the cheese is melted.
