Chicken pot pie is a great comfort food cold weather meal. But I don’t always have the time to make and roll out a pie crust. But for this tater tot chicken pot pie casserole, you don’t need any pie crust. You get all of your favorite chicken pot pie flavors, but without the work of a pie crust. Tater tots are used instead of dough, and they make a delicious alternative. Creamy filling with carrots and peas and topped off with frozen tater tots and shredded cheddar cheese. This casserole is sure to be a favorite winter time meal that is so easy to prepare.

The filling is so easy to prepare with carrots and garlic being cooked in a large saucepan until they are soft and tender. Cans of cream of chicken soup, milk, cooked chicken and frozen peas are added to the carrots and garlic. Cook the mixture until everything is heated through and creamy. Evenly spread the chicken and vegetable mixture into a greased baking dish. Top the casserole with a bag of frozen tater tots in one single layer. Bake until the tater tots are crispy and lightly golden browned. Sprinkle shredded cheddar cheese on top of the tater tots and bake for another 15 minutes, or until the cheese has melted.

Tater Tot Chicken Pot Pie Casserole

Ingredients
  

  • 1 pound cooked chicken
  • 2 tablespoons olive oil
  • 1/2 cup diced onion
  • 1 cup diced carrots
  • 2 cloves garlic, minced
  • 2 ( 15 oz.) cans cream of chicken soup
  • 1/2 cup milk
  • 1 ( 10 oz.) bag frozen peas
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 ( 30 oz.) bag frozen tater tots
  • 2 cups shredded cheddar cheese

Instructions
 

  • Preheat oven to 350 F. Heat olive oil in a large saucepan over medium heat. Cook onions, carrots and minced garlic until the vegetables are softened.
  • Mix in soup, milk, frozen peas and cooked chicken. Cook until it is heated through. Pour the mixture out into a greased baking dish.
  • Top with frozen tater tots. Bake for 30 minutes. Top with shredded cheddar cheese and bake for another 15-20 minutes.
