Easy delicious strawberry cobbler using fresh strawberries makes the perfect summer dessert. This cobbler is sweet and delicious with a fluffy cobbler crust on top. The strawberries are mixed with lemon juice and sugar and topped with a sweet crust on top. You can make this dessert for any summer occasion, such as labor day. Serve with either whipped cream or your favorite flavor of ice cream for a delicious summer time dessert.

Dice the strawberries and mix with sugar and lemon juice, then spread them out into a small baking dish. To make the cobbler crust, flour, sugar, salt, baking powder, milk, melted butter and vanilla extract are all mixed together until smooth. Pour this mixture over the strawberries in the baking dish. Bake until the top is lightly golden browned.

  • 1 pound fresh strawberries, diced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350 F. In a mixing bowl, mix strawberries with sugar and lemon juice. Spread into a greased baking dish.
  • In a large bowl, whisk together flour, sugar, salt, and baking powder. Add in milk, melted butter, and vanilla extract, whisk until smooth. Pour batter over strawberries. Bake for 25-30 minutes.
