Soft and chewy sugar cookie bars for St. Patrick’s day. These easy cookie bars are made green with food coloring, and filled with white chocolate chips. Everyone will love the soft and chewy texture of the cookie bars and the delicious sugar cookie and white chocolate flavors.

The cookie dough is made similar to a classic sugar cookie dough, except for the addition of green food coloring and white chocolate chips. Press the cookie dough into a greased square baking dish and bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

St. Patrick's Day White Chocolate Chip Sugar Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • green food coloring
  • 1 cup white chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in the egg and vanilla extract, and mix until smooth.
  • Add in the flour mixture, and mix until it is fully combined. Add in the food coloring, and mix until it is fully green. Fold in the white chocolate chips. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
