Soft and chewy peanut butter cookies rolled in green sanding sugar and topped with a chocolate kiss. These easy cookies are perfect to bake for a fun St. Patrick’s day themed treat. Everyone will love the classic peanut butter flavors, and soft and chewy texture of the cookies.

The cookie dough is made like a classic peanut butter cookie dough, then it is rolled into balls, and rolled into a dish of green sanding sugar. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through. Place one chocolate kiss on each cookie.

St. Patrick's Day Peanut Butter Sprinkle Blossom Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup green sanding sugar
  • chocolate kisses

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter and sugar until fluffy. Add in egg and vanilla extract, and mix until smooth.
  • Add in the flour mixture, mix until it is fully combined. Place the sanding sugar into a shallow dish. Roll the cookie dough into balls, and roll each one into the sanding sugar.
  • Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes. Remove from the oven, and top each one with a chocolate kiss.
