Soft and chewy classic peanut butter cookie bars with a fun twist for St. Patrick’s day. These easy cookie bars are made green using green food coloring. Everyone will love the soft and chewy texture of the bars and delicious peanut butter flavors. They make the perfect easy treat to bake this St. Patrick’s day.

The cookie dough is made similar to a classic peanut butter cookie dough, except with the addition of green food coloring mixed into the cookie dough. Press the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

St. Patrick's Day Peanut Butter Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • green food coloring

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter, granulated sugar, and brown sugar until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until combined. Add in the green food coloring, mix until fully green.
  • Press the cookie dough evenly into a greased 8-inch square baking dish. Bake for 20-25 minutes.
