Soft and chewy classic peanut butter cookies filled with green sprinkles for St. Patrick’s day, and topped with a chocolate kiss on each cookie. Just like a classic blossom cookies, with a fun St. Patrick’s day themed twist. These easy cookies are perfect for a fun and easy St. Patrick’s day treat that everyone will love.

The cookie dough is made just like a classic peanut butter cookie dough, then green or St. Patrick’s day themed sprinkles are folded into the cookie dough. Roll the dough into balls, and place them onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through. Remove from the oven, and place one chocolate kiss on each cookie.

St. Patrick's Day Peanut Butter Blossom Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup peanut butter
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup green sprinkles
  • chocolate kisses

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter and sugar until fluffy. Add in egg and vanilla extract and mix until smooth.
  2. Add in the flour mixture, mix until it is fully combined. Fold in the sprinkles. Roll the cookie dough into balls, and place them onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes. Remove from the oven, and place one chocolate kiss on each cookie.
