Easy and chewy cookie bars for St. Patrick’s day made using a package of lime flavored jello. These easy cookie bars are so quick and easy to make, it is like a classic sugar cookie dough, except with a packet of dry jello. These easy cookie bars have a delicious lime flavor and green color that makes them the perfect dessert to bake this St. Patrick’s day.

The cookie dough is stared out like a classic sugar cookie dough, then a packet of lime flavored jello is added to the cookie dough. Evenly press the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

St. Patrick's Day Jello Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 oz. lime jello packet

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and vanilla extract, and mix until smooth.
  2. Add in the flour mixture, mix until it is fully combined. Add in the dry jello packet, and mix until it is fully combined. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
