Salad is a nice healthy addition to any dinner. There are many ways that you can make salad, from using traditional lettuce leaves to a fresh spinach salad. Spinach salad is a great alternative to the traditional lettuce based salads. Filled with fresh cucumbers, sliced red onion and slices of hard boiled eggs. Serve the salad with a balsamic honey salad dressing. This salad will go great with any meal, or it can even be served as a make ahead lunch.

Fresh spinach leaves, fresh sliced cucumbers, and sliced red onion is combined in a large bowl. Hard boiled eggs are also added to this salad. The hard boiled eggs can be made ahead of time, to prepare the eggs, place eggs into a large saucepan and cover them with water. Bring them to a boil and cover and remove from heat. Let the eggs sit for about 15 minutes. Drain and rinse with cold water, peel the eggs and slice into slices. Mix the sliced eggs with the salad. Cover and refrigerate until serving, or for up to one week. Before serving, prepare the balsamic honey dressing. The dressing is a combination of olive oil, balsamic vinegar and honey. Drizzle the dressing over each salad. The dressing can be made ahead and refrigerated, although it made need to be stirred before because the olive oil and vinegar may separate.

Ingredients
  

  • 1 5 oz. bag fresh spinach
  • 1 large red onion, sliced
  • 1 large cucumber, diced
  • 4 hard boiled eggs, sliced

Ingredients for Balsamic Honey Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons honey

Instructions
 

  • In a large bowl, combine fresh spinach, red onion, cucumber and hard boiled eggs. Cover and refrigerate until ready to serve.
  • For the balsamic honey dressing, in a small bowl, combine olive oil, balsamic vinegar and honey. Drizzle dressing over each salad.
