S’mores Cookie Pie

Soft and chewy cookie pie filled with crushed graham crackers and chocolate chips. And topped off with mini chocolate bars and mini marshmallows. This easy chewy cookie pie has all of the classic delicious flavors of s’mores. It makes the perfect easy summer dessert.

The cookie dough is made like a chocolate chip cookie dough, except for the addition of crushed graham crackers. Press the cookie dough into a greased round 9-inch pie dish and bake until the center comes out clean with a toothpick. Top with mini marshmallows and chocolate bars. Bake until the marshmallows are lightly browned.

S'mores Cookie Pie

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup crushed graham crackers
  • 1 cup chocolate chips
  • 1 cup mini marshmallows
  • 3 mini chocolate bars, chopped

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk flour with salt, and baking soda. In a large bowl, mix together butter and sugar until fluffy. Add in the egg and vanilla extract until smooth.
  • Add in the flour mixture, mix until it is fully combined. Fold in the crushed graham crackers and chocolate chips. Press the cookie dough into a greased round 9-inch pie plate.
  • Bake for 20-25 minutes. Remove from the oven and top with marshmallows and chocolate bars. Bake for another 5-10 minutes.
