Chocolate chip cookie dough stuffed with graham cracker crumbs and marshmallows all covered in white chocolate. This delicious no-bake treat tastes just like s’mores cookie dough, but it is completely edible. There is no need to use the oven to make this easy treat, just the microwave and a mixer. These cookie dough treats are also great to store in the freezer because they will stay good for up to two months.
The cookie dough bites are prepared similar to how you would make cookie dough, except there is no egg in it. Softened butter and sugar are creamed together with a mixer, then flour, vanilla and milk are beat into the mixture creating a thick dough. Crushed graham crackers, chocolate chips and mini marshmallows are folded into the cookie dough to create a s’mores flavor. Roll all of the cookie dough into bite sized balls and place onto plates. Refrigerate for at least 30 minutes. Melt the candy melts in the microwave according to the package directions, stirring after each interval until melted. Fully coat each cookie dough bite into the melted candy coating and set onto plates. Refrigerate until the chocolate has set. Keep stored in an airtight container in the fridge for up to 2 weeks or in the freezer for up to 2 months.
S'mores Cookie Dough Bites
Ingredients
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup all-purpose flour
- 1 teaspoon vanilla extract
- 2 tablespoons milk
- 1/2 cup crushed graham crackers
- 1/2 cup chocolate chips
- 1/2 cup mini marshmallows
- 1 ( 10 oz.) bag white candy melts
Instructions
- In a large bowl, using wither a hand or stand mixer, beat softened butter with both granulated sugar and brown sugar until fluffy.
- Add in flour, vanilla extract and milk and beat until a thick dough forms. Fold in crushed graham crackers, chocolate chips and mini marshmallows.
- Form the mixture into small balls and place onto a plate. Refrigerate for at least 30 minutes. Melt candy melts in the microwave according to package directions, stirring after each interval until smooth and melted.
- Dip each cookie dough bite into the chocolate, coating it fully. Set onto plates and let the chocolate set.
