S’mores Brownies

Summer is the season for s’mores. Instead of the traditional s’mores that you eat around a campfire, I decided to combine a fudgy brownie with a gooey s’mores. Graham crackers on the bottom, baked with fudgy chocolate brownies and topped with marshmallows. These brownies have all of the flavors of s’mores. With summer almost ending, this brownies are a nice way to end the summer with one last s’mores.

For the base of these brownies, full sheets of graham crackers are placed into a large baking dish in one layer. To make the brownie batter, flour, sugar, cocoa powder, salt and baking powder are whisked together. Half of the chocolate chips are melted in melted butter. The chocolate butter mixture is whisked into the dry ingredients along with the eggs and vanilla extract. The remaining half of the chocolate chips are folded into the brownie batter. Spread the brownie batter on top of the graham crackers and bake until the brownie layer is cooked through. Top with mini marshmallows covering the entire top. Broil in the oven for just 1-2 minutes to lightly brown the marshmallows, watch it carefully though because it burns easily.

Ingredients
  

  • 9 graham crackers
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup butter, melted
  • 1 ( 10 oz.) bag semi-sweet chocolate chips
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows

Instructions
 

  • Preheat oven to 350 F. Place graham crackers in a single layer in the bottom of a lightly greased 9x13-inch baking dish.
  • In a large bowl, whisk together flour, sugar, cocoa powder, salt and baking powder. In a large measuring cup, melt butter. Mix 1/2 of the chocolate chips into the melted butter. Stir until the chocolate is fully melted.
  • Add eggs and butter mixture into the dry ingredients. Stir until a thick dough forms. Gently fold in the remaining chocolate chips.
  • Pour batter evenly over graham crackers. Bake for 30-35 minutes. Evenly top with mini marshmallows. Broil in the oven for 1-2 minutes, until marshmallows are lightly browned.
