Chewy and gooey s’mores cookie bars with chocolate chips and marshmallows over a graham cracker crust. These chewy s’mores bars have all of the flavors of a classic s’more with graham crackers, chocolate and marshmallows. But it has the soft and chewy texture of a classic chocolate chip cookie bar. This is the perfect baking dessert for the summer to enjoy all of the classic flavors of a s’more.
A classic graham cracker crust is first pressed into the pan. The crust is made by combining crushed graham cracker crumbs with melted butter and pressing the mixture into a small square baking dish. For the chocolate chip and marshmallow cookie dough layer, softened butter and both granulated sugar are mixed until fluffy. Eggs and vanilla are added until it is smooth. The dry ingredients are added to the dough and beat with the mixer until all of the ingredients are incorporated. Fold the chocolate chips and marshmallows into the cookie dough and spread the dough out over the graham cracker crust. Bake until the cookie dough is fully cooked through. Let the s’mores bars cool completely before cutting into bars.
S'mores Bars
Ingredients
- 2 cups crushed graham crackers
- 1/2 cup butter, melted
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
- 1/2 cup mini marshmallows
Instructions
- Preheat oven to 350 F. In a medium bowl, combine crushed graham crackers with melted butter.
- Press mixture into an 8-inch greased baking dish. In a medium bowl, whisk together flour, salt and baking soda. In a large bowl with a mixer, beat softened butter with both sugars until fluffy.
- Add in egg and vanilla extract, beat until smooth. Add in flour mixture, beating until all of the flour is incorporated. Fold in the chocolate chips and marshmallows. Press cookie dough over the graham cracker crust.
- Bake for 25-30 minutes. Let cool completely, cut into bars.
