Soft and chewy cookies made with a box of spice cake mix and filled with delicious dried cranberries. Each cookie is also stuffed with a chocolate Rolo. Everyone will love the delicious spice cake and cranberry flavors, and the delicious chocolate surprise in each cookie.
The only five ingredients that you need is a box of spice cake mix, eggs, vegetable oil, dried cranberries, and Rolos. Mix all of the ingredients, except for the Rolos together until smooth. Place the cookie dough onto a large baking sheet at least 2-inches apart. Place one Rolo on each cookie dough, and cover fully with cookie dough. Bake until the cookies are fully cooked through.

- Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Fold in the cranberries.
- Use a cookie scoop to place the cookies onto a large ungreased baking sheet and place one Rolo on each cookie dough. Cover with more cookie dough. Bake for 10-12 minutes.
