Rolo Stuffed Red Velvet Snowball Cookies

Easy classic snowball cookies with a fun Valentine’s day red velvet twist. These snowball cookies have all of the classic flavors of red velvet because cocoa powder is added to the dough. Chocolate caramel Rolos are stuffed inside of each snowball cookie for a fun chocolate surprise in every bite. Everyone will love these fun cookies for Valentine’s day or Christmas.

The cookies are made with a classic shortbread cookie dough, except with the addition of cocoa powder and red food coloring into the cookie dough. The cookies are rolled into balls, and a Rolo is placed into each piece of dough, covering the Rolo completely. Bake the cookies until the bottoms are lightly browned. Roll the cookies in a dish of powdered sugar before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • red food coloring
  • Rolos

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, combine butter with powdered sugar until fluffy. Add in flour, cocoa powder and vanilla extract, and mix until combined.
  • Add in the red food coloring and mix until it is fully red. Roll the cookie dough into balls, and flatten slightly. Place one unwrapped Rolo onto each piece of dough, and roll it into a ball, covering the Rolo completely.
  • Place the cookies onto a large ungreased baking sheet and bake for 10-12 minutes. In a shallow dish, place powdered sugar. Roll the cookies into the powdered sugar.
