The cookie dough is made by mixing a box of lemon cake mix with eggs and vegetable oil until smooth. Chocolate chips and butterscotch baking chips are folded into the cookie dough. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Place one Rolo on each cookie dough, and cover with more cookie dough. Bake until the cookies are fully cooked through.

Ingredients
- 1 ( 15 oz.) box lemon cake mix
- 2 large eggs
- 1/2 cup vegetable oil
- 1 cup chocolate chips
- 1 cup butterscotch baking chips
- Rolos
Instructions
- Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Fold in the chocolate chips and butterscotch baking chips.
- Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Place one Rolo on each piece of cookie dough. Cover with more cookie dough. Bake for 10-12 minutes.
