Rolo Stuffed Chocolate Snowball Cookies

Easy buttery snowball cookies made with cocoa powder mixed into the cookie dough. Chocolate caramel Rolos are stuffed in each cookie, and then rolled in powdered sugar, making them look like snowballs. Everyone will love these easy cookies with a fun chocolate caramel surprise in each cookie.

The cookie dough is made similar to a classic snowball cookie, except for the addition of cocoa powder mixed into the cookie dough. The cookie dough is rolled into balls, and a Rolo is placed in each cookie, roll into a ball, covering the chocolate completely. Place onto a large ungreased baking sheet, and bake until the cookies are fully cooked through.

Rolo Stuffed Chocolate Snowball Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • Rolos
  • 1/2 cup powdered sugar

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together butter with sugar until fluffy. Add in the vanilla extract, and mix until smooth.
  • Add in the flour and cocoa powder, and mix until combined. Roll the cookie dough into balls, and place one Rolo on each piece of cookie dough. Roll into balls, covering the chocolate completely.
  • Place onto a large ungreased baking sheet. Bake for 10-12 minutes. Place the remaining powdered sugar into a shallow dish. Roll each cookie in the powdered sugar.
