Rolo Stuffed Chocolate Chip Cookies

Soft and chewy classic chocolate chip cookies stuffed with a chocolate caramel Rolo candy. These cookies are sweet and delicious, they are the perfect cookie for any occasion. The caramel and chocolate filling from the Rolos goes perfectly with the flavor of the chocolate chip cookies. These cookies would be great to use up any leftover holiday candy that you have. Just place a piece of candy on a piece of cookie dough, and wrap the dough around it fully. It is then baked inside the cookie, resulting in a delicious treat.

The cookie dough is made like a classic chocolate chip cookie dough. You can even use a premade cookie dough instead to save on time. Place one unwrapped Rolo on each piece of dough, and roll it into a ball, covering the chocolate completely. Place onto baking sheets at least 2-inches apart, and bake until it is fully cooked through. Let cool completely on cooling racks before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 11/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • Rolos

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with both sugars until fluffy. Add in egg and vanilla extract, mix until smooth.
  • Add in the flour mixture, and mix until it is completely combined. Fold in the chocolate chips. Roll the cookie dough into balls, and flatten each one slightly.
  • Place one unwrapped Rolo onto each piece of dough, wrap the dough around it and form into a ball. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
