Rolo Stuffed Cake Mix Andes Mint White Chocolate Chip Cookies

Soft and chewy cookies made with a box of cake mix and filled with chopped up Andes mints and white chocolate chips. Each cookie is also stuffed with a Rolo. Everyone will love the delicious mint and white chocolate flavors and delicious chocolate surprise in each cookie.

The cookie dough is made by mixing a box of cake mix with eggs and vegetable oil until smooth. Fold chopped up Andes mints and white chocolate chips into the cookie dough. Place the cookie dough onto a baking sheet, and place one Rolo on each cookie dough. Cover fully with more dough and bake until the cookies are fully cooked through.

Rolo Stuffed Cake Mix Andes Mint White Chocolate Chip Cookies

Ingredients
  

  • 1 ( 15 oz.) box yellow cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup chopped Andes mints
  • 1 cup white chocolate chips
  • Rolos

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Fold in the Andes mints and white chocolate chips.
  • Place the cookie dough onto a large ungreased baking sheet at least 2-inches apart. Place one Rolo on each cookie dough, and cover with more dough. Bake for 10-12 minutes.
