Rolo Blossom Cookie Cups

Soft and chewy chocolate chip cookie cups topped with a chocolate caramel Rolo. It is so quick and easy to make these blossom cookie cups. Blossom cookies are usually made with chocolate kisses, but instead these cookie cups are made with Rolos. Giving them a delicious chocolate and caramel flavor that goes perfectly with the chocolate chip cookies.

The dough for these cookie cups is made similar to a chocolate chip cookie dough, with chocolate chips mixed throughout the dough. The cookie dough is then divided between paper-lined muffin cups and baked until the center of each cup comes out clean with a toothpick. Remove them from the oven, and top each cookie cup with one Rolo candy. Let cool completely before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips
  • Rolos

Instructions
 

  • Preheat the oven to 350 F. Line a 12-cup muffin pan with paper liners. In a medium bowl, whisk together flour, salt, and baking soda.
  • In a large bowl, combine butter with sugar until fluffy. Add in egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until it is fully combined.
  • Fold in the chocolate chips. Evenly divide the cookie dough between the prepared muffin tins. Bake for 15-20 minutes. Remove from the oven, and top each cookie cup with one unwrapped Rolo.
