Blossom cookies are usually made with a chocolate kiss, but instead, these cookies are topped off with a delicious caramel Rolo candy. The chocolate flavors of the cookies, and the caramel flavor of the candy go perfectly together in these cookies. They make the perfect cookie for just about every occasion.
To make the cookie dough, it is similar to making a classic sugar cookie dough, except that cocoa powder is added into the dough. Roll the cookie dough into balls, and place them onto a large ungreased baking sheet and bake until they are fully cooked through. Remove them from the oven, and top each cookie with one unwrapped Rolo candy.
Rolo Blossom Chocolate Cookies
Ingredients
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon vanilla extract

Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, cocoa powder, salt, and baking soda. In another large bowl, combine butter and sugar until fluffy.
- Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until the dough is fully combined.
- Roll the cookie dough into balls, and place them onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes. Remove from the oven, and top each cookie with a unwrapped Rolo.
