Roasted red potatoes are a great easy side dish to serve with any meal. There are many ways that you can season the potatoes. But one of my favorite ways to make roasted potatoes is to season them with taco seasoning. The potatoes are crispy and spicy. Perfect for serving with tacos, enchiladas or any other tex-mex dish. I also like to serve these potatoes as a vegetarian taco filling.
All you need is three ingredients for these potatoes. Just red potatoes, olive oil and taco seasoning. Cut the red potatoes into 1-inch cubes and place into a large bowl. If you want to save time on dishes, you can also mix the potatoes and seasoning together in a baking dish. Mix the potatoes with olive oil and taco seasoning to fully coat the potatoes. Roast in the oven until the potatoes are fork tender and crispy.
Roasted Taco Seasoned Potatoes
Ingredients
- 2 pounds red potatoes, cubed
- 2 tablespoons olive oil
- 2 tablespoons taco seasoning
Instructions
- Preheat oven to 375 F. Cut potatoes into 1-inch cubes and mix with the olive oil and the taco seasoning.
- Spread the potatoes out into a baking dish. Bake for 30-35 minutes.
