Crispy oven-roasted red potatoes are the perfect side dish for any meal. I love to make roasted red potatoes as a side dish for dinner. Because there are so many different ways that you can season them, making them the perfect side dish that goes with every meal. For these roasted potatoes, I seasoned them with dried dill and dried oregano, giving them a tasty flavor. These crispy roasted red potatoes go great as a side dish with chicken, pork chops or any other meal.
When I make red potatoes, I will leave the skin of the potatoes on, because when roasted they have a delicious crispy texture. The red potatoes need to be cut into fourths and mixed with olive oil and seasonings. For the seasonings, I used salt, pepper, dried dill and dried oregano. But any other seasonings will work, you can make these potatoes spicy with paprika or you can give them an Italian flavor with Italian seasoning. They are then roasted in the oven until the red potatoes are fork tender and crispy.
Roasted Dill Red Potatoes
Ingredients
- 2 pounds red potatoes, quartered
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon dried dill
- 1/2 teaspoon dried oregano
Instructions
- Preheat oven to 400 F. Cut red potatoes into quarters and place them into a large baking dish.
- Mix the red potatoes with olive oil, salt, pepper, dried dill and dried oregano. Bake for 20-25 minutes.
