Reese’s Peanut Butter Stuffed Ritz Crackers

Sweet and salty ritz crackers stuffed with a mini Reese’s peanut butter cup and covered in chocolate. These Ritz cracker cookies make a great treat to make for Christmas gifts, or as a easy treat to make with your family. You only need three simple ingredients to create these crackers. Make these sweet treats for an easy treat to enjoy in less than 20 minutes.

Half of the ritz crackers are placed in a single layer onto a large baking sheet. Top each cracker with one mini Reese’s peanut butter cups. Bake for just a couple of minutes, until the chocolate starts to soften. Remove from the oven and sandwich with another ritz cracker. Melt the chocolate chips in the microwave and fully coat each cracker in the melted chocolate. Set onto a plate and refrigerate until the chocolate has set. Store in an air-tight container and refrigerate until serving.

Ingredients
  

  • 1 sleeve ritz crackers
  • mini Reese's peanut butter cups
  • 1 cup chocolate chips

Instructions
 

  • Preheat oven to 350 F. Place half of the ritz crackers onto a baking sheet. Place one mini Reese's peanut butter cup onto each cracker.
  • Bake for 3-4 minutes. Remove from oven, sandwich each cracker with the remaining crackers.
  • Place chocolate chips into a microwave safe bowl, heat in the microwave in 30 second intervals, stirring after each until fully melted and smooth.
  • Dip each ritz cracker sandwich into the melted chocolate, set onto plates. Refrigerate until the chocolate has set.
