Reese’s Peanut Butter Cup Sugar Cookie S’mores

Easy s’mores made with soft baked sugar cookies and topped with mini Reese’s peanut butter cups and marshmallows. Everyone will love these easy baked s’mores for a fun and delicious treat this summer. They have the perfect amount of  peanut butter and chocolate flavors.

The cookies are baked just like classic sugar cookies. Then place half of the cookies onto a baking sheet. Top with peanut butter cups and marshmallows. Bake for just a few minutes, until the chocolate starts to soften. Remove from the oven and sandwich with the remaining cookies.

Reese's Peanut Butter Cup Sugar Cookie S'mores

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • mini Reese's peanut butter cups
  • large marshmallows

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, mix together butter and sugar until fluffy. Add in the egg and vanilla extract and mix until smooth.
  2. Add in the flour mixture and mix until it is fully combined. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
  3. Remove from the oven and place half of the cookies onto a baking sheet. Top with peanut butter cups and marshmallows. Bake for 2-3 minutes. Remove from the oven and sandwich with the remaining cookies.
