Soft and chewy classic peanut butter cookies, with chocolate peanut butter cups stuffed in each cookie. These easy chewy peanut butter cookies make the perfect easy treat. The chocolate peanut butter cups go perfectly with the chewy texture of the cookies and delicious peanut butter flavors.

The cookie dough is made like a classic peanut butter cookie dough, then the dough is rolled into balls, and flattened slightly. Place one peanut butter cup on each piece of cookie dough. Roll it into a ball, covering the chocolate completely. Place onto a large ungreased baking sheet. Bake until the cookies are fully cooked through.

Reese's Peanut Butter Cup Stuffed Peanut Butter Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • mini Reese's peanut butter cups

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter, granulated sugar, and brown sugar until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Roll the cookie dough into balls, and flatten slightly. Place one mini Reese's peanut butter cup on each cookie dough. Roll into a ball, covering the chocolate completely.
  • Place onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
